Reframing the Dining Experience at Persimmon Country Club

Management of this highly regarded country club in Gresham knew they needed a warmer, quieter dining room with smoother service flow and a layout that better supports both guests and staff.

This restaurant remodel was a study in refinement and resourcefulness. We focused on improving the dining experience through targeted updates rather than a full rebuild. With a larger bar renovation planned for next year, phase one prioritized the changes that most directly affect how the room feels and functions day to day: comfort, circulation, and overall atmosphere.

The existing laminate flooring and lack of soft surfaces made the room sound harsh and echo-heavy. The seating plan also created friction for both staff and guests. We explored dozens of layout variations, looked closely at staff movement patterns, and arrived at an arrangement that increases capacity while remaining flexible for different party sizes.

We approached the design through atmosphere: layered lighting, refined furnishings, and a mix of traditional and modern elements that add depth without visual noise. The goal was an inviting energy that reads elevated—but never precious.

Strategic table arrangements and varied seating types allow more guests to dine while maintaining comfortable spacing. Custom booths anchor the room, creating intimacy and structure–while preserving clear walkways for staff and guests.

Sound comfort was a major focus. Carpeted areas, soft seating, and discrete slat wall treatments help absorb excess noise–creating a calmer, more enjoyable dining experience that supports conversations over a delicious meal.

The result is a dining room that feels more modern while still grounded and intentionally layered; ready to evolve with the next phase of its story. We kept what was serviceable and upgraded what directly affected the daily experience.

Most importantly, the beautiful golf course view becomes the focal point, and the room finally supports it–functionally, acoustically, and emotionally.
